Paspébiac Lobster Croissant Cone
80 g Paspébiac lobster meat
25 g crisp vegetables, such as red and green peppers
10 mL (2 tsp) each, sour cream and lemon
15 mL (1 tbsp) balsamic vinegar reduction (Maille-brand quality) + 15 mL (1 tbsp) Escuminac maple syrup
Fresh herbs and fresh dill to taste
15 mL (1 tbsp) shrimp and smoked trout rillettes (Atkins et Frères brand)
Croissant cone or a fresh croissant
Micro-greens to taste as garnish
1. Mix the lobster meat in a bowl together with the crispy vegetables, sour cream, lemon and fresh herbs. 2. Spread the Atkins et Frères shrimp and smoked trout rillettes on the inside of the croissant. 3. Fill the croissant with the lobster mixture. 4. Drizzle the balsamic reduction and Escuminac maple syrup over the lobster mixture. 5. Garnish with a few micro-greens.
