A tasty start to the evening
Introducing our goat-cheese canapés: a vegetarian appetizer with a whole lot of class! With their crunchy almond-and-pecan coating, and gooey cheese-filled centre, these bites are going to be the life of the party! Although they’re pretty easy to make, they do require a bit of patience, which is why we recommend preparing them in advance. Simply cut the cheese into bite sizes, roll them in the crumb coating, cover with plastic wrap and store in the fridge. When you’re ready to serve them, all you have to do is pop them into the oven for five minutes. Better yet, cook them ahead of time and simply reheat them right before serving (they keep in the fridge for up to two days).
Crunchy goat-cheese canapés
Preparation: 10 minutes

300 g (10 oz) semi-firm goat cheese (Chèvre Noir or similar)
22 mL (1 1/2 tbsp) butter
30 mL (2 tbsp) Graham cracker crumbs
30 mL (2 tbsp) plain bread crumbs
30 mL (2 tbsp) crushed almonds
60 mL (1/4 cup) crushed pecans
Zest from 1/2 lime
1 mL (1/4 tsp) ground coriander
1 egg, beaten
12 thin slices of green apple
500 mL (2 cups) baby arugula
500 mL (2 cups) curly leaf lettuce, shredded
Walnut oil, to taste
Aged balsamic vinegar, to taste
1. Preheat oven to 190°C (375°F). 2. Slice the cheese into 4 cm (1.5 in) cubes. 3. Place butter in a bowl and melt in microwave. 4. Add Graham crackers and bread crumbs to melted butter. Incorporate nuts, lime zest and coriander. 5. Dip cheese cubes into the beaten egg, then roll into crumb-and-nut mixture. 6. Place cheese cubes on top of apple slices. 7. Arrange canapés on a baking sheet lined with parchment paper. 8. Bake in the centre of the oven for five minutes or until cheese is slightly melted and the coating is golden brown and crunchy. 9. Serve immediately atop the mixed greens and drizzle with walnut oil and balsamic vinegar.
What to drink with these canapés?
All the ingredients in this recipe go great with white wine. The broad mouthfeel of Castello di Pomino pairs well with the texture of these cheese bites, and the subtle wood notes highlight their delicate nutty flavour. Another great choice is La Sereine, a Chardonnay that features green apple, lemon and mineral scents. For a unique pairing, try Entre Pierre et Terre, a sparkling pear cider that exudes floral and fruity notes with a subtle touch of honey – the perfect drink to marry with your goat-cheese canapés.
