Mini recipes

 

Homemade cheez whiz

In a pot, mix 3 cups (750 mL) of grated orange cheddar, 1 cup (250 mL) of evaporated milk, 1 tablespoon (15 mL) of maple syrup, 1/2 teaspoon (2.5 mL) of dry mustard, 1/2 teaspoon (2.5 mL) of paprika and 1/2 teaspoon (2.5 mL) of salt.

Cook over medium heat, stirring frequently, until the cheese is melted. Remove from heat and whip the mixture until it is very smooth and homogenous. Pour into a Mason-type jar and let cool. Refrigerate for approximately 3 hours or until completely chilled.

 

Beery barbecue sauce

In a pot over medium heat, brown three garlic cloves in 5 tablespoons (75 mL) of vegetable oil. Deglaze the pan with 1 cup (250 mL) of beer and let simmer for 1 minute. Add 6 tablespoons (90 mL) ketchup, 3 tablespoons (45 mL) honey, 1 tablespoon (15 mL) soy sauce, 3 tablespoons (45 mL) mustard and Tabasco sauce, to taste.

Stir and let simmer on low heat for 30 minutes or until you achieve the desired consistency.
