Here’s our version of a camping favourite—s'mores!—but bite-sized. Your camping trip is about to take an unexpected turn!

S’mores-o-rama!

Camping = s’mores! This sweet treat is the best way to end a day in the great outdoors, so it’s really no wonder it’s always such a hit. The combination of Graham crackers, melted chocolate and gooey marshmallows truly is hard to beat. Not ready for a living-room fire pit? Our recipe lets you make s’mores into bite-sized delights. It’s perfection cooked in mini-muffin moulds: genuine Graham-cracker-crumb crusts, melted chocolate centres, all topped with a golden marshmallow.

Variety is the spice of life!

Make your campers extra-happy with a variety of flavours. Use peanut butter with your chocolate, perhaps swap in a dot of jam, some caramel or even a banana slice. Don’t have a mini-muffin mould on-hand? No problem: Use a rectangular dish and cut your s’mores into squares. Looking to break the mould even more? Make your s’mores into a pie or tart, a pan of brownies, or even a dip.

Preparation: 30 minutes

Makes 24

250 mL (1 cup) Graham cracker cookie crumbs
60 mL (1/4 cup) sugar
80 mL (1/3 cup) melted butter
24 dark or milk chocolate squares, weighing roughly 6 g each
12 large marshmallows, cut in half lengthwise

1. Preheat oven to 180°C (350°F). 2. In a bowl, mix sugar, cookie crumbs and melted butter. 3.Fill the centres of a 24-mini muffin tin with dough, and press dough firmly onto bottom and sides. 4. Bake in oven for roughly 5 minutes, or until crust is golden brown. 5. Remove from oven and place chocolate squares in the centre of the crusts, and cover with a half-marshmallow. 6. Return to oven for 2 to 3 minutes, or until marshmallows are slightly melted and golden brown. For marshmallows that are even more golden, place s’mores bites under the broiler for roughly one minute. Let stand 10 minutes before removing from mould.

Variations
Add peanut butter, jam, almonds, coconut or banana slices before filling with chocolate and marshmallow.

The word “s’more” comes from the contraction of some more, because that’s what everyone says once they taste one!

Bring the night to a fabulous finish with a wine bearing the Fruity and Extra Sweet taste tag. Canada is known the world over for its dessert wines, so why not get to know this sweet category? To accompany this recipe, wines that have a silky smooth texture are a great match for the fluffy marshmallows, while wines with lively acidity will bring freshness and a balanced taste.

S’mores… in a glass!

Now here’s a drink that will surprise all your guests! Make this gourmet s’mores-inspired cocktail with vodka and coffee, and garnish with marshmallows, chocolate syrup, and crushed Graham crackers. A true treat for your taste buds!

S’mores Coffee

1 drink

Ingredients
15 ml (1/2 oz.) marshmallow-flavoured vodka
15 ml (1/2 oz.) chocolate-flavoured vodka
180 ml (6 oz) brewed coffee
Milk or cream, if desired
1/3 cup miniature marshmallows
1 tbsp. chocolate sauce
1/2 graham cracker, crumbled

Preparation
Combine the coffee and vodkas in a coffee cup. Add milk or cream, if desired. Top with marshmallows. Place the cup on a baking sheet and brown the marshmallows under the broiler for a few seconds, keeping the oven door open. Alternatively, brown with a kitchen torch. Drizzle with chocolate sauce and sprinkle with graham-cracker crumbs.
