Simple and stylish

Feel like improvising a light, end-of-day meal while watching your favourite celebrities on TV? Our stuffed endives recipe will provide that extra touch of finesse. This bitter-tasting winter vegetable grows in the dark and is readily available in local markets. The Belgians traditionally wrap whole endives in ham slices, top them with a white sauce then brown them in the oven. But raw endives are just as refreshing and tasty, and their shape and texture make them ideal in a salad. Arrange them on a large serving dish so the guests can help themselves. No need for utensils. Let the prediction games begin!

Endives with tomatoes, feta and bacon

Preparation: 15 minutes
Cooking: 5 minutes

Makes 24

2 endives, halve each lengthwise
2 slices bacon, chopped
15 mL (1 tbsp) maple syrup
24 grape tomatoes, halved
1 small green onion, minced
Lemon zest
45 mL (3 tbsp) finely chopped chives
45 mL (3 tbsp) minced dill
125 mL (1/2 cup) feta, crumbled
Salt and pepper
Fleur de sel

1. In a skillet, cook bacon until crispy. 2. Add maple syrup and cook for a few minutes until caramelized. Set aside. 3. In a bowl, mix tomatoes, green onion, zest and herbs. 4. Season with salt and pepper. 5. Just before serving, drop a spoonful of the tomato mixture onto each endive leaf and top with some bacon and feta. 6. Garnish with fleur de sel and pepper. Add lemon zest and dill, to taste.

 

Tip

Prepare the filling – cherry tomatoes, bacon and feta – on the eve or morning of your event. Stuffing the endive leaves is pretty straightforward – and it can be done at the last minute.

What to drink with these endives

We’re talking Academy Awards night, so bubblies take precedence. The Bisol Crede is a fine Prosecco with floral and white-fruit aromas, just right for these tasty tidbits.
