It’s the end of the day and you’ve brought some gorgeous veggies home from the market. Why not make a salad for dinner tonight? Say opa to Greece with feta, olives, tomatoes or buon appetito, Italia, with tomatoes, basil and Bocconcini or head to Mexico with avocado, sour cream, tomatoes and cilantro. Serve your salads in colorful bowls or glasses for a fast, easy summer dinner.

Have fun creating layers, and decorate your salad with celery stalks, endive leaves, breadsticks, citrus slices, chives or green onions. There’s no limit to what can make a table fresh, festive, and fabulously colourful.

Mexican salad

Preparation: 10 minutes
Cooking: none
Makes
4 to 6 verrines or bowls

1 avocado
The juice of 1 lime
The flesh of 1/2 tomato, cut into 5 mm (1/4 in.) dice
10 ml (2 tsp.) onion, thinly sliced
1 jalapeno pepper, seeded and finely chopped
Tabasco sauce
Salt
10 ml (2 tsp.) fresh coriander, chopped
60 ml (1/4 cup) sour cream
80 ml (1/3 cup) salsa
A few leaves of coriander

1. In a bowl, with a fork, mash the avocado coarsely. 2. Add the lime juice and stir. 3. Add the tomato, onion, hot pepper to taste, Tabasco sauce, salt and chopped coriander 4. Stir and set aside. 5. Place the avocado mix at the bottom of each verrine or bowl. 6. Continue with the sour cream and finish with the salsa. 7. Garnish with coriander leaves. 8. Serve with corn chips.

Greek salad

Preparation: 10 minutes
Cooking: none
Makes 4 to 6 verrines or bowls

250 ml (1 cup) tomato flesh, cut into 1 cm (3/8 in.) dice
125 ml (1/2 cup) cucumber, seeded and cut into 1 cm (3/8 in.) dice
125 ml (1/2 cup) yellow bell pepper, cut into 1 cm (3/8 in.) dice
1 small red onion, thinly sliced
1 garlic clove, finely chopped
10 ml (2 tsp.) fresh oregano, chopped + a few sprigs
30 ml (2 tbsp.) olive oil
30 ml (2 tbsp.) red wine vinegar
Salt and freshly ground black pepper
80 ml (1/3 cup) feta cheese, diced
Black olives, pitted

1. In a bowl, mix together the first 8 ingredients. Season with salt and pepper. 2. Stir. 3. Place the salad in the verrines or bowls. 4. Add the diced feta and the olives. 5. Garnish with sprigs of oregano.

Italian salad

Preparation: 10 minutes
Makes 4 to 6 verrines or bowls

250 ml (1 cup) tomato flesh, cut into 1 cm (3/8 in.) dice
1/2 onion, thinly sliced
1 garlic clove, finely chopped
30 ml (2 tbsp.) olive oil
15 ml (1 tbsp.) fresh basil, thinly sliced + a few whole leaves
Salt and freshly ground black pepper
250 ml (1 cup) bocconcini pearls

1. In a bowl, mix together the tomato, onion, garlic, oil and basil. 2. Season with salt and pepper. 3. Stir gently and let rest for about 1 hour at room temperature to allow the flavours to meld. 4. Place half of the tomato mix at the bottom of each verrine or bowl. 5. Continue with half of the bocconcini pearls. 6. Add a layer of the tomato mix and finish with the rest of the bocconcini pearls. 7. Garnish with basil leaves.

What to pair with your salad?

MEXICAN: Jose Cuervo Margarita sparkling tequila cooler pairs perfectly with cilantro and avocado. With its fresh citrus and lemon-lime notes, it’s the ideal beverage pairing!

GREEK: Why not try a wine from the country that produces some excellent bottles well worth discovering? Kir-Yianni Paranga white wine has notes of honeydew melon and white flowers that highlight this salad’s flavours.
