During the hectic holiday season, make sure to set some time aside to just unwind. Helpful hint? Cook with last night’s leftovers! Our glazed ham recipe inspired us to revisit a French classic: the croque monsieur.

Bread, ham, cheese, and butter… a simple list for a scrumptious dish! You can also add your own twist depending on what you’re in the mood for. Try adding spinach, tomatoes, or some lovely Quebec cheese (think, Oka, Pied-de-Vent, Le Noble). You could even use your leftover raclette cheese. Bon appetit!

After a well-deserved sleep-in, treat yourself to a brunch fit for a king… and queen! Whip up a delicious croque madame and serve it with a light salad. Wondering what exactly is a croque madame? It’s a traditional croque monsieur, but topped with an egg. Easy, breezy, and delicious!

A bit of sauce with that?

Some croque monsieur recipes call for a drizzle of béchamel sauce. This decadent and rich version is definitely worth a taste! Simply spread the sauce over your slice of bread, then layer with ham and cheese. Bake in the oven at 200°C (400°F) until cheese is melted and golden brown.

Croque-monsieur Ham-cheese

Preparation: 15 minutes
Cooking: 5 to 7 minutes
4 servings

4 slices of country bread
325 ml (1 1/3 cup) fresh spinach, sliced
60 ml (1/4 cup) sliced almonds, lightly toasted
350 g (3/4 lb.) sliced cooked ham
8 to 12 thin slices of tomato
330 ml (1 1/3 cup) grated gruyère cheese

1. Preheat oven to 200°C (400°F). 2. Divide the spinach and almonds evenly on four slices of bread and top with the ham. 3. Top each sandwich with two slices of tomato and then the cheese. 4. Place the sandwiches in an oven-safe pan and bake for 4-5 minutes. 5. Finish by broiling to brown the cheese. 6. Serve immediately.

Apple and goat cheese mini Croque Monsieur

Preparation: 20 minutes
Cooking: 3 minutes
4 servings

12 mini pitas
8 to 12 slices Black Forest ham
2 apples, grated
1 125-g (4 1/2 oz.) log of goat cheese, cut into 12 slices

1. Preheat oven to 200°C (400°F). 2. Place pitas on baking sheet. Top each pita with ham and grated apple. 4. Add a slice of goat cheese on top. 5. Bake in the oven 2 to 3 minutes, or until cheese begins to melt. 6. Serve immediately.

Croque-madame

Croque Madame

Preparation: 5 minutes
Cooking: 5 minutes
4 servings

60 g (2 oz) softened butter
8 slices of country-style bread
320 g (11 oz) sliced Gruyere or Emmental
5 mL (1 tsp) ground nutmeg
Ground pepper
250 g (8 oz) Black Forest ham
4 eggs

1. Butter slices of bread on one side. 2. In a hot pan, set one slice of bread, buttered side down. 3. Top with one slice of cheese and sprinkle with nutmeg and pepper. 4. Add 60 g (2 oz.) of ham, followed by another slice of cheese. Top with second slice of bread, buttered side up. 5. Cook, covered, over medium heat for about 2 minutes, or until bread is golden brown. 6. Flip sandwich over and press down using a spatula. Continue to cook another 2 minutes. 7. Top with a fried egg. 8. Serve immediately.

What to drink with your croque-madame?

A sparkling rosé with fine bubbles and notes of red berries, like Mumm Napa Rosé, would make the perfect brunch-time drink! Just dry enough and refreshing enough to balance out the fattiness of the melted cheese, the buttered bread and the egg.
