Popcorn rising

These days, popcorn is popular again and it comes in an unusual array of flavours and fragrances.

The Popcorn Bar at London’s exclusive Hutch Club features a spectrum of flavours ranging from caramel and coffee to red wine and olive oil. Several Montreal bars also serve flavoured popcorn with their cocktails. These healthy and original nibbles are a welcome change from the usual chips or peanuts. Flavoured popcorn makes quite an impression – easily prepared at home, it’ll certainly liven up your cocktail parties!

Quick and easy: Popcorn with olive oil, espelette pepper and bacon

Pop 125 mL (1/2 cup) popcorn kernels. Add 6 slices (cut into small pieces) cooked bacon, 30 mL (2 tbsp) butter, 30 mL (2 tbsp) Espelette pepper, 30 mL (2 tbsp) chopped chives and zest from two limes. Sprinkle with salt, pepper, and mix. Yields 1 L (4 cups) popcorn. The popcorn’s salty tang goes hand in hand with the freshness of beer or sparkling wine.

Surprise Dessert

Enhance fresh-fruit baskets with our rum-flavoured popcorn. The combination makes a wonderful dessert whether at a sit-down dinner or an informal gathering. Regardless of presentation – in elegant dessert verrines, paper cones, or a large glass bowl or wooden board placed on a kitchen island or coffee table – popcorn goes well with amber rum, served neat or in a cocktail.

Quick and easy: maple-caramel popcorn with rum and coconut

In a pan, bring 90 mL (6 tbsp) of maple syrup to a boil and cook for 5 minutes or until the syrup thickens. Add 30 mL (2 tbsp) each of butter and rum, and continue cooking until caramel forms. Mix popcorn with 125 mL (½ cup) roasted coconut. Drizzle caramel over popcorn. Sprinkle with fleur de sel. Bake a few minutes in the oven (250° C) for crunchiness. The amber rum’s caramel aromas blend deliciously into the grilled-coconut and maple scents of this popcorn.

Quick and easy: Margarita popcorn

The classic Margarita is a cocktail that almost no one can resist, and it’s de rigueur for warming up frosty autumn nights. Why not give yourself, and your popcorn, a mini Mexican vacation? With a zesty citrus zing and aroma, this lip-smacking recipe is the perfect compliment to a tequila margarita. Why not charm your happy hour guests with this delicious treat served in a margarita glass? Olé!

In a large pot set over medium heat, melt 6 tablespoons of butter. Add 30 mL (2 tablespoons) of lime juice, and 30 mL (2 tablespoons) of tequila. Next, add 10 mL (2 teaspoons) of sugar, 10 mL (2 teaspoons) of sea salt, and the zest of one lime. Stir until all of the sugar has dissolved. Make roughly 13 cups of popcorn and empty into a large bowl. Drizzle the butter mixture over the popcorn, and toss gently.

Quick and easy: S’mores popcorn

In for a cozy night of cocooning at home or at the chalet? This sweet treat will tempt even the most particular palates! Taking inspiration from our Café S’mores cocktail, we created this popcorn delight featuring chocolate, marshmallows, graham cracker bits, and a hint of coffee liqueur. You’ll feel like you’re huddled around a classy campfire with this recipe that’s love at first bite.

Prepare roughly 10 cups of popcorn and set aside. In a large pot set over medium heat, melt 45 mL (3 tablespoons) butter. Add 3 cups mini-marshmallows and stir until the marshmallows have fully melted. Remove pot from heat. Break roughly 10 graham crackers into chunks. Add half of the broken crackers to the popcorn mixture. Pour the butter and marshmallow mixture over the popcorn and toss gently. Spread the popcorn on a cookie sheet covered with parchment paper. In the microwave or in a double boiler, melt roughly 200g (7 oz.) of milk chocolate and 30 mL (2 tablespoons) of coffee liqueur. Drizzle chocolate sauce over popcorn, and leave to cool—until the chocolate and marshmallows have set. Break mixture into pieces and serve in bowls.
